Fennel (Foeniculum vulgare)

Fennel seeds are the dried ripe fruit of a feathery leaved perennial belonging to the parsley family. Once native to the Mediterranean, it is now grown worldwide. The oval, yellowish brown seeds have a subtle, sweet anise-like flavour.
It can be used to counteract the oiliness in fish and the fattiness in meats such as pork.

Complements fish, pork, potatoes, rice, eggs, cheese, pickles, apples.
